Guess what was on sale recently?
I pressure canned several pints of baby carrots and also quarts of chicken breast (it was $1/lb at our local grocery store). I froze some of the chicken breast after cooking/chopping and separating into ziploc freezer bags. It makes quick meals so much easier if the chicken is ready to go. This will be used for chicken spaghetti, chicken & dumplings, mexican chicken, and lots of other dishes!

These will look lovely on your shelf! Did you raw pack the chicken and use water, broth or salt?? I just received the 23 qt. Presto canner the other day and want to try chicken too. Any tips ? I did take it to the local extension service here and had the gauge tested ~ everything A-OK !
I wish I had known about raw packing prior to canning these (I found out belatedly – LOL). It would have saved me some time! I boiled the chicken, then diced it, packed with broth and a tsp salt, and pressure canned. (I have the Presto canner too – LOVE it!) I’ve tried canning lots of different things with great results – jellies, apple butter (water bath on those two), spaghetti sauce, enchilada sauce, potatoes, chicken, carrots – you can pressure can almost anything.
